The tart taste of apples and cheddar cheese season these quick, juicy chicken breasts from Betty Muir in Atlanta, Georgia. In a small bowl, combine the apple, cheese, bread crumbs, salt and pepper. Pour apple juice and water over chicken; brush with butter.
Ingredients. For the apple chicken breasts: 2 tablespoons olive oil. 2 large chicken breasts, boneless and skinless. 1 cup sharp white cheddar.
Preparation. Combine apple, cheese, and bread crumbs. Set aside. Flatten chicken breasts between sheets of waxed paper to 1/4 inch.
These Brie- and apple-stuffed chicken breasts (bone-in or boneless) are filled with the mixture, baked, and then served with a simple pan.
